If fatty products are to be processed, fat ought to be very homogeneously distributed in the block, otherwise the limit temperature for homogeneity is &#8211; 4 \u00b0C. <br><br>The tempering capacity is variable and depends on the final required temperature and on the product (meat, fish, vegetables, fruits, butter, etc. Figures below show these variations. The data in the charts are calculated for the TMW 35 operating at 30 kW power, with ton\/toff1 optimum at 95 %, for blocks with regular size and weight 25 kg (600 mm x 400 mm x 200 mm) and for a starting temperature around -20 \u00b0C\/-18 \u00b0C. <br><br>The maximum microwave power which can be used in processing is limited by the products and not the tunnel. Recipes power vs. time must be chosen according to the compromise between capacity and homogeneity of heating.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">TEMPERING CAPACITY VS. DESIRED FINAL TEMPERATURE<\/h2>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/vacopac.com\/wp-content\/uploads\/2021\/09\/tmw35en1.png\" alt=\"\" class=\"wp-image-7468\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Example:<\/strong> Chicken \u2243 1.8 t\/h from -18 \u00b0C to -5 \u00b0C or \u2243 1.15 t\/h from -18 \u00b0C to -3 \u00b0C.\n<strong>Example:<\/strong> Fatty pork \u2243 2.1 t\/h from -18 \u00b0C to -5 \u00b0C or \u2243 1.5 t\/h from -18 \u00b0C to -3 \u00b0C.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">TEMPERING CAPACITY VS. PRODUCT TYPE<\/h2>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/vacopac.com\/wp-content\/uploads\/2021\/09\/tmw35en2.png\" alt=\"\" class=\"wp-image-7470\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Examples:<\/strong> butter (1.8 t\/h at -3\u00b0C) or beef 60 % lean (1.15 t\/h at -3\u00b0C) for the same final temperature.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">TEMPERING CAPACITY VS. FAT CONTENT<\/h2>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/vacopac.com\/wp-content\/uploads\/2021\/09\/tmw35en3.png\" alt=\"\" class=\"wp-image-7472\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Example:<\/strong> capacity \u2243 1.2 t\/h for beef 60 % lean, or \u2243 0.85 t\/h for beef 100 % lean from -18 \u00b0C to -3 \u00b0C<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Capacity is highly variable if final temperature is -7 \u00b0C or -3 \u00b0C, or if meat is lean beef or fat pork.
